I Never Tire of Making Cookies - I’m on the other side of 50 and I’ve been baking since I was a little girl and you with think after all of these years, I would be tired of testing new recipes, having cookie exchanges and/or just baking hundreds of small cookie bites; but I’m not!

I just tested a bunch of new recipes for a gathering I was having at the house and while all of the recipes were good, nothing was great, except, a filling for a sandwich cookie. It was very distinctive in flavor and would suite any cookie that is meant to be sandwiched together.

SANDWICH COOKIE FILLING (for any cookie in need of filling):

12 ounces sweetened condensed milk (1 cup)

6 tablespoons fresh lime (or lemon or orange juice)

1 teaspoon of grated zest of chosen fruit

3 ounces cream cheese, room temperature

Heat the condensed milk in a small saucepan over med-high heat, stirring constantly until bubbling. Turn heat down to medium and continue to cook until the texture is like pudding. Cover surface with plastic wrap and chill until ready to use.

In a separate bowl, beat the juice, zest and cream cheese together. Add the chilled milk to combine. Chill until ready to use. Makes 1 ½ cups.
